Again,....Rainbow steam cake with banana mini cuppies......

This evening i made the steam cake with white egg again....and some banana mini cuppies for evening tea time.........   
Steam rainbow cake

500 ml egg white
325g caster sugar
1 tbsp cake emulsifier (ovalette)
1/2 tsp salt
100 ml evaporated milk
50g melted butter or oil
1 tsp baking powder
200g flour
50g corn flour
25g milk powder

1 tsp vanilla essence
1 tsp strawberry paste
1 tsp lemon paste (I add lemon zest..hahha)
1 tsp mocca paste (this time i sue chocolate emulco)
1 tsp pandan paste

Method
1. Whisk egg white, sugar, salt, ovalette till light and fluffy (abt 10mins and don't overbeat)
2. Sift flour, corn flour and milk powder ( aside)
3. Mix melted butter and evaporated milk  (aside)
4. Add melted butter mixture into egg white mixture and mix till well combined
5. Add in vanilla essence
6. Add in sifted flour a little at a time
7. Divide batter into 4 parts
8. Prepare steamer and steam abt 7-8 mins for each layer

This is the hot dog with pasta and cheese inspired by martha stewart hehehehehe.....taste is quite yummy.........

hot dog bread, pasta, mini sausages, mayo and chilli sauce.............so easy.............


'Buah Melaka' .................

Angah really loves to eat 'buah melaka'..... she asked me to make this kuih since she reads the recipe in Izzat's story book... ummm, actually I have make before but the grated coconut , especially the the young grated coconut is difficult to find here......
Finally we do it twice.....one made by me..and made by angah herself



Bubur Kacang with Durian for Hi Tea......

As salam..guys.........

There are some durian puree  in my fridge..hahaaa..,.. I keep this puree for durian butter cakes..now the menu needs changes!

Hubby just came back from Bandung... during his last trip when he visited KL.. he bought  a lot of spices and magazines including some green beans....hahahaa..he knows me !

Here..it's so difficult for me to buy grated coconut or even fresh coconut milk..normally i will use fresh milk or coconut milk in can..

So....we have Bubur Kacang with Durian for Hi-Tea served with soft plain bread...

Ingredient
1/2 cup green beans (kacang hijau). Soak overnight.
1 can coconut milk
1 block Palm Sugar
Durian
2 cups water
pinch of salt

Method:

Soak green bean overnight. Boil in 2 cups of water until the green bean soft. Add Palm sugar, durian, salt and coconut milk. Turn off the stove as soon as it boil. Serve warm or chill

Some egg white in my fridge still look ok...I'm trying to do something with it..hubs and kids are outside playing basketball hahaha..5 kids vs 1 daddy! Luv to joint but.. can't ..busy at kitchen preparing hi-tea and dinner. 

Here comes rainbow eggs white cakes..with my assistant..hana..she helps me mixing the flour! (actually I hope hana wants to play basketball games with hubby and the kids..but..emmm hana a.k.a. squirel can smell what i want to do!)

Olive Oil Rainbow Rice for brunch....

Seri Muka .......

Yayy..alhamdullillah, eimaan just got her one year injection...the injection appointment should be last month..but she got high fever and flu......................

This seri muka is for our afternoon tea................




Seri Muka
Ingredients

Bottom layer
400 grm of glutinous rice - wash and soak for at least 4 hours or overnight
230 ml of coconut milk
2 pandan leaves
1 tsp of salt (next time i will use 1/2tsp)
1 tsp sugar (I added)

Top layers
4 large eggs
6 tbsp rice flour
5 tbsp custard powder/cornstarch
500 ml of coconut milk
200 grms of sugar
1 tsp of salt
Few drop of red and yellow coloring( I only use pandan leave juice..hehehhe)
Few drop of pandan paste
Few drop of vanilla essence (I added)


Method
1. Prepare the steamer. Combine glutinous rice, salt and coconut in a square or round cake pan. Mix well. Place the screwpine/pandan leaves on top of the rice and steam over rapidly boiling water for about 30–35 minutes or until cooked through.
2. Discard pandan leaves. Fluff up the rice, and then press rice firmly down with a banana leaf or aluminum foil until it is compact. Return it to the steamer.
3. For the topping, stir eggs and sugar until well combined. Add the coconut milk and the rest of the ingredients. Strain the batter to remove any lumps.
4. Divide the batter into 3 equal portions. One portion adds a few drop of red coloring, another one with yellow and the last one with green or pandan paste.
5. Scratch the surface of the steam rice lightly with a fork. Pour in the first (red) layer of the batter on top of the rice. Steam over a low heat for 5-7 minutes or until set.
6. Before pouring the second (yellow) layer scratch the surface lightly with a fork. Steam until set and followed by the last (green) layer. Steam for another 7 minutes.
7. Set it aside to cool completely before cutting into serving pieces.

Oreo Cuppies...................

This week will be the  last week for school day in the first term. Next  week  the kids will be on holiday for a week! Hoorey! ...

I have made some cuppies for the 'Majis Tahlil' at my kids' school....


 
Oreo Cupcake

Ingredients
250g butter ( I use Anchor)
1 cup sugar
2 cups self rising flour - sift
1 tsp baking powder – sift
4 eggs
1 teaspoon vanilla essence
8~10 oreos – crushed (with the cream)

Method
Whisk butter, sugar, self raising flour, baking powder, eggs and vanilla essence for 2 mins.. .
Stir in ur crushed oreos and thats it..
Baked in preheated oven of 170C for 10 to 15mins


Ganache topping
250ml fresh cream / whipped cream / heavy cream
250g dark cooking chocolate
30g unsalted butter

Kek Lapis a.k.a Layer Cakes

This is the kek lapis (before  this i only knew it's originally from Sarawak)....plenty of flavors...........though the layers are not that smooth....glad that the attempt is a success hehehe............. Thanks to Rima.. You make my day!

Ingredients

45 egg yolks
400g caster sugar
900g butter - i used Anchor (cold)
3 tbsp condensed milk
50g milk powder
50g flour - i used hongkong flour
chocolate paste - 
1 tbsp coffee extract/oil/essence -  rima added (I follow rima)
1 tbsp  mocha paste - rima added
1 tbsp  vanilla paste - rima  added

Method
Preheat oven 175C.. greased n layer with baking paper in ur 9" baking pan
Whisk butter with 200g of sugar.. once its fluffy.. add condensed milk and continue to whisk till pale in colour - put aside
In another bowl.. whisk egg yolk and 200g of sugar till fluffy.
Add butter mixture into egg mixture and mix till well combined
Add sifted milk powder and flour into ur batter
Divide batter into two part.. add coffee extract and mocha paste into one and to another part add vanilla paste
Weigh ur batter for each layer to achieve same thickness.. bake first layer using top and bottom heat.. bake the rest of the layer using grill mode - top heat..
Bake last layer for 10 mins using lower heat..
Once baked let it rest for 5 mins bef u take it out of ur pan.. let it rest till cool and served

kuih bakar

  Make some gift for kak tie family's for dinner  invitation  at her house.

Kuih Bakar

Ingredients
2 cups flour
1 cup sugar
1 cup pandan juice (i blended pandan leave)
3 eggs
1/2 tsp salt
2 tbsp butter (melted)
2 1/4 cup coconut milk (450ml)
2 tbsp oil
green colouring
sesame seed (I'm not use it)

Method
Just blend all ingredients in blender except oil
Greased baking pan with oil.. heat in preheated oven of 200C
Once heated.. pour batter and bake for a further 45mins or till top brown in colour

valrhona choc....finally hubby got the choc (introduced  by blogger rima, "Bisous A Toi" from singapore, thanks) at the Kuala Lumpur International Airport and Changi International Airport Singapore......

the taste is just.....perfecto chocolate.......some research found that choco can reduce stress....so guys....give it a try...............

Apam Beras


 Tapau for school meal....Apam beras
Ingredient 
1 cup cooked rice
2 cups rice flour
1 cup white sugar
1 1/4 cup water
1 tsp dried yeast
1 small packet Eno

Freshly granted coconut
Salt

Direction
Blended rice with water till fine
In a airtight container, mix sugar, yeast,..mix well
Pour the blended rice into the mixture ..stir  well
Cover the container for 4 hours
Add eno and stir gently till well mixed
Add food coloring
Keep aside  for 5 min
Spoon into the prepare moulds  
and steam for 15-20  min on high heat
Serve with granted coconut 

Steamed for a few min..then add salt.

Masjid Bandaraya Kota Kinabalu.......

As Salam...

We found this picture from our last vacation in Kota Kinabalu, Sabah....
Just want to share some picture and memory about a very nice masjid in KK, Sabah..It's near the Universiti Malasyia Sabah...
There's a restaurant, book store and bakery in this masjid area... and the food taste good..and it is clean!

Mini Murtabak & Omelet

As salam...to all..

Our kids love cooking! Izzat and angah got a license from us to use the gas stove and cook if  I am not home or when I'm busy..!   One day Izzat mentioned that he wanted to be a chef and have a big restaurant! I grow up with business women.....  My mum sell  food and work at a keropok factory at the same time... We are trained to be independent especially when we are hungry ! 

Me and hubby decide to give a chance to our kids to make their own meal if they want! At least they can express their talent..Who knows our kids can be like ...Hugh Fearnley or Chef Wan! Insya Allah..

   


Salmon omelet by Izzat.....add some mozzarella, parsley, salt and fresh salmon

Recipe...
2 cups flour
2-4 cups plain water (depends..should be melted )
Salt

Filling
Sweet potato or potato, cut in cube
Minced beef
Onion
2 pcs Garlic
Ginger
Curry powder 
Curry leaf
Plain water

Direction 
Based
Mix flour , salt and plain water..
Cook on a hot, greased griddle, using about 1/4 cup of batter. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom; turn and brown the other side.
 Filling
Add cooking oil into a heated frying pan or wok. Add in  onion, garlic, ginger, curry leaf , curry powder and stir into the hot oil. Add in minced beef .. Cook for 10 minutes after lowering the heat. Add some water in. Season with salt according to taste, add water, and potatoes. Stir fry until the meat is tender and potatoes are cook..





Limbang, Sarawak......

As salam..

We went to Limbang, Sarawak to settle some personal matters... It is about 78km from Bsb....but sometime it will take  at least 30 mins at Kuala Lurah Immigration checkpoint.... if you are lucky! Just a small town with basic infrastructure...

There's Bank Rakyat (new branch), Maybank, Public Bank, KFC, JPJ, Post Office, 2 star hotel, one shopping mall.... and we can find a few Muslim Restaurant..and the  food price is quite expensive! But we would rather go to the KFC..hehehhe...
