Blueberry muffin for hi-tea











Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.

Easy and fast homemade.... pizza


 Ingredient
3 1/4 cup bread flour
1tsp salt
2tsp sugar
2 tsp instant yeast
2 tbsp olive oil
1 1/4 cup warm water
 
 i just Mix all the ingredient and lastly add salt.  hhehehe
 

Method

Knead using the mixer and dough hook, on low to medium speed, until the dough is smooth and elastic, If the dough seems a little too wet, sprinkle on a bit more flour.
 
Place ball of dough in a bowl that has been coated lightly with olive oil. Turn the dough around in the bowl so that it gets coated with the oil. Cover with plastic wrap. Let sit in a warm place  until it doubles in size, about 1 to 1 1/2 hours (or several hours longer, a longer rise will improve the flavor).  But i like to  use this method .....If you don't have a warm spot in the house you can heat the oven to 150 degrees, and then turn off the oven , more easy and fast....
 
 Let the oven cool till it is just a little warm, then place the bowl of dough in this warmed oven to rise.  Spoon on the tomato sauce, sprinkle with cheese, and place your desired toppings on the pizza.
 ( i put a lot of sausage, coz   my kids love it sooo.. much!)
 
 Preheat the oven to 200 c for at least 20-30 minutes. done ready to eat..yummyyyy!!

Moist Butter Cake

Baking this morning while waiting 'kuih pandan bakar' in the oven ready to eat.... helped with my two assistant...hahhaaa...hana and eimaan..

 

also .....both of them are my food taster..hehhe,,squirrel and otter....smiling  face after eat 'purple and pink cake'..hana fovorite colour  is purple and eimaan choose pink....

 Ingredients
195g all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
170g unsalted butter, softened
225g sugar (I just follow rima...reduce 25gm..next time i will reduce to 35gm..)
1 large egg, plus one large egg yolk
1 1/2 tsp vanilla extract
12 tbsp whole milk


Method
1. Preheat oven to 190 degrees celsius. Butter and line a 9-inch cake pan.
2. In a medium bowl, whisk together flour, baking powder and salt.
3. Using a mixer on medium speed, cream butter and sugar until fluffy for about about 2 minutes.
4. Beat in egg, egg yolk and vanilla until well-combined.
5. On low speed, add flour mixture in 3 parts, alternating with milk.
6. Switch mixer to medium and beat for 10 to 15 seconds, just until batter appears
uniform.
7. Pour batter into prepared pan and smooth top with spatula or knife.
8. Bake for about 40 minutes, or until it a skewer comes out clean.
9. Leave to rest in pan for 5 minutes before serving.

Parmesan Loaf Bread


Ingredients

  • 2 cups warm water
  • 2/3 cup white sugar
  • 1 1/2 tablespoons active dry yeast
  • 1 1/2 teaspoons salt
  • 1/4 cup vegetable oil
  • 6 cups bread flour
  • Grated Parmesan..and sugar

Directions

  1. In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  2. Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  3. Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
  4. Bake at 350 degrees F (175 degrees C) for 30 minutes.

Steam Chocolate cake


Bahasa Melayu Version (request from my sis in law..kak mie)
Coklat kek kukus

Bahan-Bahannya :
375g mentega
1 tin susu cair
2 cawan gula (sy kurangkan setengah cwn)
4 biji telur  (pukul menggunakan garfu)
1 cawan koko
2 cawan tepung gandum
1 sudu teh esen vanila
1 sudu teh baking powder
1 sudu teh soda bikarbonat

Cara-Caranya :
1. Cairkan mentega bersama susu cair dan gula. Sudah sebati tutup api. Tunggu hingga  suam, masukkan telur.
2. Ayak bahan kering bersama dan masukkan sikit demi sikit ke dalam adunan mentega. Masukkan juga esen vanila. Kacau sebati, masukkan dalam loyang 9 inci yang telah disapu minyak. Kukus selama 1 setengah jam.

Topping:
1 cawan susu pekat
2 sudu makan serbuk koko
2 sudu makan mentega

Cara

Masukkan susu pekat dan serbuk koko ke dalam periuk. Kacau rata.
Panaskan dengan api yang sederhana. Kacau hingga sebati.
Masukkan mentega dan kacau rata sekali lagi.
Tutup api dan kacau sehingga sebati lagi.
Tunggu sehingga sedikit likat, kemudian tuang di atas kek.

English version

Steam Chocolate Cake

375g butter (i use unsalted butter)
1 can evaporated milk (i use ideal brand)
2 cup caster  sugar (i reduce half cup)
4 eggs (lightly beaten)
1 cup cocoa powder
2 cup plain flour
1 sudu teh esen vanila
1 tsp baking powder
1 tsp soda 

Methods:
1. Heat up your steamer or wok before making the cake.

2. Line and grease a 9-inch pan.

3.(A)
Mix caster sugar, evaporated milk and butter in a saucepan. Stir over low heat until sugar is dissolved and butter is melted.  Once all ingredients are melted, turn off the fire and leave it until cool.

(B)
In the meantime, sift the flour, cocoa powder, baking powder and baking soda into a large mixing bowl.

4. Once ingredient (A) is cooled, add the beaten eggs in and mix thoroughly. 
5. Pour (B) ingredient into the flour bit by bit and stir till well combined. lastly add vanilla extract

5. Pour the batter into prepared pan and place it in the steamer. Cover the top of pan with  of aluminium foil.

6. Steam over medium heat for  1 hour.

Happy Birthday Ayahcik....

Victoria Sandwich cake

 





Ingredients
250g unsalted butter
250g sugar
250g self raising flour
250g eggs
1 tsp vanilla extract
1/4 tsp salt
2 tbsp milk

For The Filling and Decorating
6 tbsp Fruit compote or jam
8 tbsp double cream - i used whipping cream and cheese cream and added 2 tbsp of icing sugar... whipped till it was soft /medium peak.
Confectioner’s sugar, to sprinkle on the top of the cake

Method:
Preheat the oven to 160C
Mix together the self raising flour and salt. Set aside.
Put the butter in a bowl with the castor sugar and beat together until really light, pale and fluffy.
Gradually add the eggs, beating well after each addition. Then incorporate the vanilla extract.
Sift the flour and fold it in delicately with a metal spatula to combine.
Add enough milk in order to get a smooth dropping cake dough consistency.
Pour into two greased 8" round pan and smooth out the top with a spatula.
Bake in the centre of the oven for about 30 minutes or until golden and a skewer inserted into the middle comes out clean.
Allow to cool in the tin for 10 minutes, then remove the baking paper and turn out onto a wire rack that's covered in a clean cotton tea towel to prevent marking. Cool completely.
Place the bottom of the cake on a cake stand/dish, then spread generously with the compote/jam.. pipe  whipped cream and then then place sliced strawberry evenly... (pour the juices on top of the whipped cream)
Sprinkle with confectioner’s sugar just before serving.
