Chicken percik

Chicken Percik Kelantan


Trust me ...kids would love this so much!


Ingredient A:

Whole chicken- cut in 4 part 
5 shallot
3 clove of garlic
1 inch ginger
Salt
 
Chicken gravy Ingredient:
2 pack coconut milk
10 shallot
1 inch ginger
Chili Paste
Salt
Sugar
Tamarind 

 
Methods
 
Put all ingredient A in blender and grind until fine. Marinate whole chicken with this paste about 30 minutes.
Place the chicken in pot and cook over medium  heat until chicken partly cook. Take chicken and place in tray and grill.
 
Gravy Methods
 
Blend all the ingredient and transfer to pot ..stir the ingredient until it thicken. Season with salt and sugar. Ready to served.

Buttermilk Fried Chicken

Buttermilk Fried Chicken Recipe

  • 1 (3 pound) fryer cut into pieces
  • 2 cups buttermilk
  • 1 large onion, sliced
  • 1/4 cup chopped mixed fresh herbs (parsley, tarragon, thyme) or a teaspoon each of the dried herbs.
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 2 cups flour
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion salt
  • 1 teaspoon cayenne pepper
  • Salt and pepper
  • 2 cups grapeseed oil, or other high smoke-point oil such as canola oil, or peanut oil

Method

1 Soak chicken overnight (at least 8 hours and up to two days) in buttermilk with onions, herbs, paprika, and cayenne pepper. (Regarding the use of buttermilk, has had good results from soaking chicken in plain yogurt instead of buttermilk.)
2 Drain in colander, leaving some herbs on chicken. In a large paper or plastic (sturdy) bag, mix flour with seasonings. Meanwhile, heat 2 cups oil in a large, heavy-bottomed skillet (cast iron, stainless steel, or anodized aluminum - something that can take the heat) on medium high heat until a pinch of flour starts to sizzle when dropped in the hot oil (but not so hot that the pan is smoking). Remember when working with hot oil, always have a pan lid close by.
3 Place chicken pieces in bag with flour and shake until thoroughly coated. Add chicken to hot pan and fry on 1 side for 12-15 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 10-12 minutes, again until golden brown.
Be careful to keep the oil hot enough to fry the chicken, but not so high as it burns the chicken. To do this on our electric stove we have to alternate the settings between high to medium high several times while we are cooking.
4 Use tongs to remove chicken from pan. Place on a rack over a cookie sheet or broiling pan for the excess oil to drain. Add more salt and pepper to taste.

Chicken Tajine...suka-suka hati style

I'm in the process of clearing the stock in our fridge and wardrobe... we are going back to hometown to celebrate eid ul fitri with family and friends.....kids are really excited and dreaming of playing firework and quizzes (with cash prizes) with ayahcik , aunties, and cousins...me? hubby? yeeeaa...as cool as we are..this is the 4th eid celebration for us since we are in brunei...and but only this year insya allah we will celebrate at hometown!..hahahah  no wonder why our kids are really excited! duit raya hehehe kaching...kaching....
So back to this chicken..hahha actually i saw this marvelous recipe in TV al hijrah channel " Masak dengan hati , masak dengan Iman" hosted by Chef Ammar El Ali...emmm..yeaah i know this type of recipe is izaat's favorite.... i will share this recipe and have a try! and "selamat menyambut Nuzul Quran"
                                         Ingredients
1- Chicken Leg 4 Pcs
2- Chicken stock 100 ML
3- Olive oil 50 ML
4- dried apricots 100 Grams ( i change to prune..and it taste good!)
5- cashew nut , toasted 40 Grams ( I use pistachio..hehhe)
6- onion, chopped 1 Number
7- ground cumin 1 Teaspoon
8- ground coriander 2 Teaspoon
9- ground cinnamon 1 Teaspoon
10- paprika powder 1 Teaspoon
11- Honey 1 Tablespoon
12- coriander, finely chopped 1 Tablespoon
13- salt 1 Teaspoon
14- Black crush pepper 1 Teaspoon
15- Ginger finely chopped 1 Tablespoon

Methods

1- Heat half of the olive oil in a large casserole dish over a moderate heat. Season with the spices (Salt Black pepper and Paprika and mix all over the chicken) then sear the chicken pieces until golden brown in color all over. Remove from the dish, then add the onion and sweat for 4-5 minutes, stirring occasionally. Add the spices at this point and a little salt, stirring well to combine.

2- Add the chicken back to the dish along with the apricots and cover with the stock. Bring to the boil, and then cover the Dish over low heat cook for 25-30 minutes until the chicken is tender and soft. Stir in the honey, roasted cashew nuts and chopped coriander.

3- Adjust the seasoning as necessary

Chicken Chop

Chicken BBQ Sauce

Ingredient
  
1 medium onion, finely chopped
4 garlic cloves, minced garlic (can use more)
1/4 cup vegetable oil
5 teaspoons chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1 -2 teaspoon fresh ground black pepper (do not use the fine black pepper!)
1 pinch cayenne pepper (or adjust to taste)
2 cups ketchup
1 cup brown sugar, packed
1/4 cup cider vinegar
1/3 cup prepared French's yellow mustard
1/4 cup Worcestershire sauce
3 teaspoons liquid smoke (for the very best flavor do not omit). Don't have...I use oyster sauce..hhehe

Directions:

1. Heat oil over medium heat; add in onion and saute for about 3 minutes, then add in garlic and saute for 2 minutes.
2. Add in chili powder, paprika, cayenne, salt and black pepper; stir for 1 minute.
3. Add in all remaining ingredients; bring to a boil stirring with a wooden spoon to combine.
4.Reduce heat to low and simmer uncovered stirring occasionally for 1 hour over low heat (do not cover the pot or the texture and flavor will be affected, if you have a splatter screen then use it to cover the pot).
5.Cool to room temperature then cover and refrigerate for 24 hours or more before using.

Black Pepper Sauce 
Saute onion+add in water+chicken stock
ground black pepper+sweet ketchup
corn flour(mix with water)+fresh milk...stir as thicken as ur prefer...Lastly add some some sugar and salt.

Classic Potato Salad
1 1/2 cups mayonnaise
2 tablespoons cider vinegar
2 tablespoons sugar
1 tablespoon yellow mustard
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper
2 celery ribs, sliced
1 cup onion, minced
5 hard-boiled eggs
paprika

Directions:

1. Boil peeled potatoes in salted water until done. Cool to  room temperature.
2. Place diced potatoes in large bowl.
3. Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl.
4. Add to potatoes.
5. Add celery and onions and mix well.
6. Stir in eggs.
7. Sprinkle a little paprika on top

Holy Yum Chicken...

1 1/2 – 2 pounds boneless, skinless, chicken thighs 
1/2 cup Dijon mustard, 1/4 cup pure maple syrup
1 tbsp. rice wine vinegar
1/4 tsp. salt
1/4 tsp. ground black pepper
1 tbsp. cornstarch
2 tsp. fresh rosemary for garnish

Instructions:
  1. Preheat oven to 450 degrees. Line a oven-proof pan with 2 layers of tin foil.
  2. In small bowl, whisk together Dijon mustard, maple syrup, rice wine vinegar, salt and pepper.
  3. Place the chicken thighs in the foil layered pan then pour the mixture on top of it.  Turn the chicken around in the sauce to make sure it gets all coated.
  4. Bake, uncovered, for 40 minutes.
  5. Remove from oven and let chicken sit for 5 minutes then transfer to a plate. Do NOT discard the liquid.
  6. Immediately after plating chicken, whisk in the 1 tbsp. of cornstarch into the liquid in the pan. You’ll create a nice, thick sauce to drizzle over your chicken. You need to do cornstarch mixing immediately because the liquid needs to be hot in order for it to thicken properly. If it’s still not thickening after 1 tbsp., you can add a little more.
  7. Sprinkle rosemary on top b4 served

Chicken Rendang



Ingrediante 
Fresh Chicken
3 pcs Asam keping
150 gm kerisik/toasted coconut (Heat the coconut in a dry wok, stirring continuously until golden brown)
2 tbsp Curry Powder
2 stick Cinnamon/kayu manis
5 pcs Buah Pelaga/Cardamon
5 pcs Bunga lawang/star anise
5 psc cengkih/Clove
2 Liter Coconut Milk
40gm Gula melaka/ sugar
Cooking Oil
1 cup kecap manis
turmeric leave (slice )
lime leave (slice)

Blended Ingredient
15 shallot
5 garlic
Dry chili
100 gm black raisin
3 Lemon grass
3-4cm lengkuas/galanga
3-4cm Ginger
2-4 cm turmeric

Directions

Using a blender or a food processor, blend the shallots, garlic, chilies, ginger,turmeric, galanga, raisin and lemon grass to a thick paste. 
 
Using the wok, fry the star anise, clove  and cinnamon...add shallot paste ; cook for 4-5 minutes or until is browned., stirring continuously. Add chicken; cook over a medium heat for a further 3 to 4 minutes,
Stir in sugar/gula melaka, coconut milk, ans  salt to taste.Bring to a boil, lower heat, and simmer until most of the liquid has gone and taste good!  oopsss..lastly add lime and turmeric leave ...(lets....about 1 hour).

Grilled Beef, Crispy fried chicken and dessert

Grilled beef

 hahaaa..which one come first?



 Crispy Fried chicken




Ingredient
Whole chicken, cut into pieces
Corn starch
2 large egg ... lightly beaten
Bread Crumb (optional)
Ground black pepper
salt

Directions
  1. Preheat oil
  2. To Marinate: In a large glass dish or bowl, combine the corn starch,egg, salt and mix together. Add chicken and turn to coat; cover and refrigerate to marinate for 20 minutes,
  3. In a separate bowl, mix together the corn starch, salt, pepper and bread crumb. Remove chicken from marinade and drain. One at a time, dip chicken pieces into corn starch mixture, then egg mixture, then corn starch mixture again, making sure each piece is well coated.
  4. Drop chicken, one piece at a time, into hot oil. Fry half of the chicken pieces until golden brown.
  5.  Kids and hubs really like it!
Easy and Fast coslow....




Slice of carrot and cabbage

fresh milk or baby powder milk..hehehee
