Family friend and Buns..........


 Assalam...again,



Alhamdullilah.. tonight we have an invitation to dine with Dr. aziz and Kak tie's family.   We know them since 2010... A very humble sister and brother reminds me to my sis and bro at my hometown! We are very close here as we stayed at the famous Le Gallery  ..... anyway thanks a lot for the lovely dinner tonight...even kak tie has fever and looked tired, they still  treat our family! Thanks again!

A complete mix dough...Cover with plastic wrap and allow to rest for 1 hour or till double in bulk.

I making some bun again...Honey soft bun! This kind of bread is simple and good enough to me to handle it ..and not taking my time a lot! easy and fast..and the result good!

Place dough into a lightly oiled bowl and turn till all sides are very lightly coated this

After dough increase the size....

Knead and again... cover with plastic wrap and allow to rest for 1 hour or till double in bulk

You can brush the tops with an egg wash to get that shiny coating

Soft Honey Dinner Buns:

Ingredients

  • 1 1/2 cups milk
  • 2 tablespoons shortening
  • 2 tablespoons butter
  • 1/4 cup liquid honey
  • 4 - 4 1/2 cups bread flour
  • 2 1/4 teaspoon instant yeast
  • 1 teaspoon salt

Method

Pour milk into a saucepan and bring to a scald. Set aside. Pour your honey into a large bowl, add in shortening and butter. Pour in the hot scalded milk. Stir till all the shortening and butter is melted. Add in 2 cups of flour and mix till smooth. Allow to cool to 110F. Add in salt and yeast. Mix till smooth and allow to rest uncovered for 15 minutes. Add in another cup of flour and stir. Pour mixture on a flat, floured surface. Begin to knead and slowly add in more flour as you need. You may or may not need all the 4 1/2 cups of flour. You just don't want the dough to be to sticky. Knead for 10 minutes. Place dough into a lightly oiled bowl and turn till all sides are very lightly coated. Cover with plastic wrap and allow to rest for 1 hour or till double in bulk. With a weight scale divide dough into 12 equal parts. Roll each piece into a ball and cover for 10 minutes. This will help the dough to relax and will be easier to work with and shape. If you want to make round buns, you can place them on a parchment lined cookie sheet at this time and cover with plastic wrap for 1 hour or till double in bulk. You can brush the tops with an egg wash to get that shiny coating. Take 1 egg white in a bowl and beat with a wire whisk till foamy. Brush just the foam on top of each bun. You can also garnish the tops of the buns with poppy seeds, sesame seed, parmesan cheese. Bake in a 350 degree preheated oven for about 12 to 14 minutes.

Pasta & Cheese........school lunch box.....

As salaam........

Alhamdullilah, we have fully recovered from the 'fever season' .  Hana, eimaan, aqiel  are smiling and happy again! Eimaan starts to eat a lot as usual...me? as a minister of kitchen.......routine rushing with my normal schedule the 6 kids.....

Just a quick 'tapau' for the kids to school. While preparing lunch....just boil the pasta!

I'm rushing to prepare our dinner tonight after we hang out @ time square for cucur pisang with our kids after back from school..hahaha...Hubby bought some frozen salmons after work and.... this is our meals for tonight......

Grilled Lamb Loin......

I just  marinate with what i have in my stock , ground black pepper, olive oil, rosemary, basil,paprika, thyme.....surprisingly the taste is so good......



for fast and easy meals....hehehehehe.......................

Hot Cross Bun......

As salaam.....

uuuummmm...i'm still in the mood to clear up my flour stock. This time i'm doing buns. My kids always asked me .."why do you always bake?'...hahahha and the answer is ....it is my favorite pastimes and lessen my stress  and i love , love, love baking.....hahahahha. 

Ok.... stop rambling and start work. This bun texture was so soft and tasty to..suppose..hehehe if there's no mistakes. The preparation is a day before and a day after. I just prepare the ingredient before sending my kids to school @ 12 noon. After coming back,  just mix the ingredient and chill  it! ....and continues another jobs!

It's easy and believe me this recipe will excite u to try it  for the second time....and i will...hehhehe.Good luck!

Shape the dough..it's..easy shape...


I use this!


Ingredients

Dough

1 1/2 cups buttermilk
1/4 cup melted butter
2 eggs (beaten)
1/2 cup sugar
3 1/2 - 4 cups bread flour (i use wholemeal flour)
1 tablespoon instant yeast
1 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup raisins
1/2 cup cranberries
3 tablespoons Apricot jam (for glaze)

Paste for the crosses:

  • 3 tablespoons flour
  • 1/2 teaspoon powder sugar
  • 2 tablespoons water

Methods

Heat buttermilk to lukewarm, be sure to stir continually. Pour into a large bowl. Add in sugar, melted butter and eggs, mix with a wooden spoon. In a separate bowl add 1 cup of flour, cinnamon, nutmeg, salt and yeast.

Stir with a wire whisk till well blended. Add dry ingredients to the liquid mixture. Stir with a wooden spoon till smooth. Add in another cup of flour and beat for 2 minutes. Continue to add flour slowly, till the dough comes together.

Pour out onto a lightly floured surface and continue to knead for 8 minutes. You may not need all the flour. You want the dough to be on the sticky side rather then the dry side. The dough will become smooth and elastic. Knead in the cranberries and raisins. Add a little oil to a clean bowl add the dough. Prep your 13X9 casserole dish with parchment paper.

Cover with plastic wrap and place in fridge overnight. Next day remove dough about 4 hours before using. Punch down the dough. Allow the dough to rest for 20 minutes. Pour out the dough and shape into a log, cut dough in half. Cut each half into 6 pieces, for 12 pieces. I weight each piece so they will all have the same weight. If you want your buns to all be the same in size you need to do this.

Shape into balls and place onto the parchment paper . Cover with plastic wrap and allow to rise for 2 hours or till double in size. After buns have risen. Mix the ingredients for the paste to make the crosses. Place paste into a zip-lock bag and cut the tip off. 
Squeeze the paste on top of the buns to make the cross.

Bake in a preheated 350 degree oven for bake 30-35 minutes or until golden brown. Remove from oven and heat apricot jam in the microwave strain out the lumps and brush the tops of the buns
This excellent   hock helps me to mix and knead the dough ...perfecto!
