Chicken Rice

In  a week i make 3 times for this nice chicken rice...my kids really love it!and they keep asking again...hehheeh


Whole chicken
Ginger
Garlic 
Shallot
*(blend)

Ketchup Sauce 
Oyster sauce
Soy sauce (salted)
Soy sauce (sweet)
Honey
Sesame oil

Rub the chicken with ginger, garlic and shallot for about 30 minutes (blended paste)
Bring a large pot of water to the boil and add the chicken.
Remove the chicken from the water and put aside.. rub chicken with ketchup sauce ingredient and and deep fry the chicken .
Rice
Chicken oil
*shallot
*garlic
*ginger (blend)
Pandan leave
bay leave
Fresh milk
Chicken powder
Salt
sugar
Cinnamon stick, star anise and cardamon

Wash rice...heat blended paste in a wok. Add in all spice, bay leave and pandan leave. Pour half chicken stock, fresh milk, chicken powder, salt and sugar..let it boil and get in wash rice. Transfer to rice cooker until cooked.

Chili sauce
Bird chili
garlic
2 cm ginger
1 tsp vinegar
1 tsp salt
1 tsp sugar
1/2 cup chicken stock tomato sauce

Blend all ingredient and cook in a wok. Add some salt and sugar

Ketchup 
Heat chicken kitchen sauce .....until boiled


Soup
Salted cabbage
Salt
Chicken powder
Scallion (Daun bawang)
Crisp fried onion

Heat chicken stock and add in all the ingredient.

Pulut Sambal

Pulut sambal is one of my hubby and my son aqiel favorite... i soak Glutinous rice (beras pulut) last night before sleep....happy to make this coz this recipe really not disappointed me!

Nasi lemak for breakfast

   Our breakfast today...

Durian Crepe



  Crepe Ingredient


4 tbs flour
4 tbs tropical flour
2 tbs corn flour
2 tbs custard flour
2 eggs
2 tbs vegetable oil or melted butter
2 tbs sugar
1 cup fresh milk
3 tbs water
salt
yellow color
durian filling

Methods
( i just blend all the ingredient)
 
Method:
1. Mix all ingredients for the crepe together till you get a smooth runny batter. Strain if your batter is lumpy.
2. Heat up a non-stick flat based pan on medium heat and grease lightly with some butter or oil . Pour in  amount of batter and cooked till surface of the crepe is firm 

Cream Custard Ingredient

1/4 cup flour
1 tbs  custard/ corn flour
1/4 cup sugar
2 eggs
1 1/2 cup milk ( i use fresh milk)
1 tbs butter
1 tsp vanilla
Salt
200 ml Non Dairy Whipping Cream

Methods
Mix all the flour..sieve  add in sugar, add in egg and  1 cup milk. Make sure all together smooth runny batter.
Add in balance of 1/2 cup milk, vanilla and  salt
Stir in medium heat until the batter thick.....
Add in butter and keep stir.
Keep in fridge for a while
Beat Non Dairy Whipping Cream, stiff peak... add in  custard and stir until combine. Then wrap....done. Nice to eat when it is cool...

Sekaya Telur....

Once.... when i was  a kid my mom always make this kuih coz we have lots of chicken and duck...hehheh...but i don't realize and care about the recipe....huhuh..now...i have to try it by my self. And thanks a lot to kak azie ..coz her recipe really helps me...muaahhhaa..really love  the taste and smell!

Ingredient
6 eggs (original recipe use duck eggs)
1/2  cup palm sugar
1/2 cup castor sugar
1 cup coconut milk
2 pandan leaves
salt
3-4 clove ( i didn't use)

Method
 1.Combine all the ingredient and  beat until combine.
 2.Cover 8 inch round loose bottom tin with plastic.
 3.Pour custard through and  sieve ....
 4.Place steamer over low heat until you see some steam
 5.Steam on medium heat for 30 minutes. Set aside
 6.To eat, slice steamed cake with oiled knife

Chicken percik

Chicken Percik Kelantan


Trust me ...kids would love this so much!


Ingredient A:

Whole chicken- cut in 4 part 
5 shallot
3 clove of garlic
1 inch ginger
Salt
 
Chicken gravy Ingredient:
2 pack coconut milk
10 shallot
1 inch ginger
Chili Paste
Salt
Sugar
Tamarind 

 
Methods
 
Put all ingredient A in blender and grind until fine. Marinate whole chicken with this paste about 30 minutes.
Place the chicken in pot and cook over medium  heat until chicken partly cook. Take chicken and place in tray and grill.
 
Gravy Methods
 
Blend all the ingredient and transfer to pot ..stir the ingredient until it thicken. Season with salt and sugar. Ready to served.

Pakistan Lamb Biryani

Oh....... I love this recipe...really want to do it again. But i do change a few step and the recipe from the original owner.

 

Lamb Biryani



Ingredient:
5 cups white basmati rice, soaked in cold water for 30 minutes, drained
9 trimmed lamb shoulder
4 star anise
cinnamon stick
8 cardamon
10 whole cloves
1 tsp coriander powder
1 tsp cumin powder
1 tsp fennel seed powder
1 tsp powder turmeric
3 onion-thinly sliced
5-6 tomatoes-minced
2 cloves garlic – minced
3 inch ginger – minced
1 ½ cup yoghurt
2 dried bay leave 
Olive oil
4 boil egg
4 boil potato
½ cup fresh milk (optional)
Saffron

Additional
Crisp Fried Onion
Coriander Leave- slice
4 Green Chili
roughly chopped mint leaves


Lamb Curry Ingrediante

Marinated lamb..season with salt, half of clove garlic, ginger and coriander powder, cumin powder, fennel seed powder,turmeric powder abt 1 hour.


Add lamb,...cook until lamb is tender, about 1 hour. Add tomatoes,  yogurt,bay leaf , sugar and salt cook uncovered,... for 15 minutes more. Set aside.

Heat remaining oil in pot over high heat. Add  balance of garlic, ginger and onion; cook, stirring, until fragrant. Mix yoghurt and tomatoes let heat for a few  minute. Lastly
add in bay leaf,salt and sugar..

Rice Preparation.
Wash basmathi rice and soak for 20 mins. In difference pot, add in water, oil, cloves, cardamon,and salt..let it for a few mins..add in basmathi rice. Don't let rice cooked 100%..toast it.

In difference pot mix into rice with your fingers. Top with remaining lamb curry and remaining rice; drizzle with remaining saffron; mix. Steam, covered, on low heat until rice is tender, about 10 minutes.
Lastly top boil egg and potatoes...drizzle with crisp fried onion,green chili and coriander leave . Garnish with remaining mint.

Corinder leaf
Salt
Mix all the ingredient

Simple noodle soup...

Tired...need something easy, fast and  and delious.  and Alhamdulillah.. there is some beef stock leftover and This is the result

This   is second time order from kak teh.... My pumpkin cheese cake usually one of the hit order same with pumpkin Pie...hahah want to try?  just email me....

Dinner with grilled beef ....just marinate with olive oil, salt and pepper.

Nasi Dagang..finally

Finally i'm in super fast wifi zone ...hehehe. Actually i'm been doing so much thing to update  my blog... but internet line at my place  was aggrrrr!!! can explain in word!!!!

Ok back to story..this recipe was from my sis..aka kak ha or mama or acik. I use originally  terengganu spice bought at my hometown given by my sis...
But for the recipe ...i change some little bit ..and will update asap.


Hi tea with super easy Chicken Pie



Chicken Pie

Ingredient:

Filling
1 cup chicken fillet
1 cup botton mushroom (slice)
1 can mushroom soup(i use Campbell)
1 can peas(optional)
1 onion-diced
1 potato- cut small cube and boil
1 tsp pepper
2 tbsp butter or oli olive
1 egg yolk
Some water

For the pastry,i use karft instant pastry

Method:

Heat the oil or butter over the heat. Saute diced onion and cook until aromatic. Add mushroom  and chicken. Cook until mushroom turns soft.

Pour mushroom soup, potato,pea,water and season the pepper and salt. Continue cook for 2 to 3 minutes. Turn off and set aside.

Bake 12-20 mins@ 200c.





Easy Choco Muffin


i,m  running my time to pick up hubby at office and izzat at school..but i  must left some   sweet for kids before check out from my kitchen... and this recipe    only take less than  30 minutes....and it's safe me!huhuuuu!
Rich Chocolate Chips Muffin


  Ingredient A
 
 2 egg
1 cup brown sugar
100 ml fresh milk
120ml corn oil
1/2 tsp vanilla

  Ingredient B
190 gm plain flour (sieve)
1 tsp baking powder double action (sieve).. (i use regular baking powder)
1/2tsp baking soda(sieve)
1/4 cup cocoa powder (sieve)
1/2 cup choco  choc chips

Method:
Mix all ingredient A...and  sieve ingredient into abowl..mix them till the batter all together

Pour the batter 3/4 in cupcakes casing and sprinkle choco chip on the top
Bake for 20mins at 170 C

light dinner with Spaghetti Carbonara...

 It's simple...but delicious!

Ingredients

  • 1 Tbsp olive oil or unsalted butter
  •  Fresh prawn
  • 1-2 garlic cloves, minced, about 1 teaspoon (optional)
  • 3-4 whole eggs
  • 1 cup grated parmesan or pecorino cheese
  • 1 pound spaghetti pasta (or bucatini or fettuccine)
  • Salt and black pepper to taste

Method

1 Put a large pot of salted water on to boil (1 Tbsp salt for every 2 quarts of water.)

2 While the water is coming to a boil, heat the olive oil in a large sauté pan over medium heat. Add the prawn and cook slowly until cook. Add the garlic (if using) and cook another minute, then turn off the heat and put the prawn and garlic into a large bowl. 

3 In a small bowl, beat the eggs and mix in about half of the cheese.


4 Once the water has reached a rolling boil, add the pasta, and cook, uncovered, at a rolling boil. When the pasta is al dente (still a little firm, not mushy), use tongs to move it to the bowl with the prawn and garlic. Move the pasta from the pot to the bowl quickly, as you want the pasta to be hot. It's the heat of the pasta that will heat the eggs sufficiently to create a creamy sauce. Toss everything to combine, then add the beaten eggs with cheese and toss quickly to combine once more. Add salt to taste.
Serve at once with the rest of the parmesan and freshly ground black pepper.
If you want, sprinkle with a little fresh chopped parsley.



Pandan Layer Cake

Really admire to bake this a along time a go..and finaly!

Pandan Sponge cake
 
Ingredient
150 gm flour(sieve) 1 tsp baking powder (sieve) 5 eggs 100 gm castor sugar 1 tsp ovallete 50 ml fresh milk/ evaporated milk 1 tsp vanilla
Pandan flavor/ green colour
50 ml cooking oil

Method: Mix all ingredient except cooking oil Beat until soft peak +/- 15 mins Add in cooking oil and fold in gently with spatula until mix Preheat oven 170c line ur cooking pan.
Pour batter into baking pan and bake for 30mins.


Pandan Custard

Ingredient

1200ml coconut milk or evaporated milk
1 cup castor sugar
10 gm instant jelly powder 100 gm tepung Hoen Kwe flour(green /white
Salt Pandan flavor green colour

Method for pandan custard:
 
Mix all the ingredient in pot
cook with medium heat till mixture thickens and smooth
Place a slice cake into a cake ring, pour some in custard and continue the process till the cake is covered with custard
Leave aside to cool and set before chilling in the fridge.
Remove cake form the ring..and slice it!
