Bienvenue a Paris

Assalam...sorry guys...I had had a  very busy schedule and routine here ..with my expected  for new baby insya allah end of this month will add up more new duties. And after a long break I've got something to share...we went to Paris last dec.

and yes...!

just like Dr Aziz told us....Paris is City of Romance! hahahh

Chicken Rice

In  a week i make 3 times for this nice chicken rice...my kids really love it!and they keep asking again...hehheeh


Whole chicken
Ginger
Garlic 
Shallot
*(blend)

Ketchup Sauce 
Oyster sauce
Soy sauce (salted)
Soy sauce (sweet)
Honey
Sesame oil

Rub the chicken with ginger, garlic and shallot for about 30 minutes (blended paste)
Bring a large pot of water to the boil and add the chicken.
Remove the chicken from the water and put aside.. rub chicken with ketchup sauce ingredient and and deep fry the chicken .
Rice
Chicken oil
*shallot
*garlic
*ginger (blend)
Pandan leave
bay leave
Fresh milk
Chicken powder
Salt
sugar
Cinnamon stick, star anise and cardamon

Wash rice...heat blended paste in a wok. Add in all spice, bay leave and pandan leave. Pour half chicken stock, fresh milk, chicken powder, salt and sugar..let it boil and get in wash rice. Transfer to rice cooker until cooked.

Chili sauce
Bird chili
garlic
2 cm ginger
1 tsp vinegar
1 tsp salt
1 tsp sugar
1/2 cup chicken stock tomato sauce

Blend all ingredient and cook in a wok. Add some salt and sugar

Ketchup 
Heat chicken kitchen sauce .....until boiled


Soup
Salted cabbage
Salt
Chicken powder
Scallion (Daun bawang)
Crisp fried onion

Heat chicken stock and add in all the ingredient.

Pulut Sambal

Pulut sambal is one of my hubby and my son aqiel favorite... i soak Glutinous rice (beras pulut) last night before sleep....happy to make this coz this recipe really not disappointed me!

Nasi lemak for breakfast

   Our breakfast today...

Durian Crepe



  Crepe Ingredient


4 tbs flour
4 tbs tropical flour
2 tbs corn flour
2 tbs custard flour
2 eggs
2 tbs vegetable oil or melted butter
2 tbs sugar
1 cup fresh milk
3 tbs water
salt
yellow color
durian filling

Methods
( i just blend all the ingredient)
 
Method:
1. Mix all ingredients for the crepe together till you get a smooth runny batter. Strain if your batter is lumpy.
2. Heat up a non-stick flat based pan on medium heat and grease lightly with some butter or oil . Pour in  amount of batter and cooked till surface of the crepe is firm 

Cream Custard Ingredient

1/4 cup flour
1 tbs  custard/ corn flour
1/4 cup sugar
2 eggs
1 1/2 cup milk ( i use fresh milk)
1 tbs butter
1 tsp vanilla
Salt
200 ml Non Dairy Whipping Cream

Methods
Mix all the flour..sieve  add in sugar, add in egg and  1 cup milk. Make sure all together smooth runny batter.
Add in balance of 1/2 cup milk, vanilla and  salt
Stir in medium heat until the batter thick.....
Add in butter and keep stir.
Keep in fridge for a while
Beat Non Dairy Whipping Cream, stiff peak... add in  custard and stir until combine. Then wrap....done. Nice to eat when it is cool...

Sekaya Telur....

Once.... when i was  a kid my mom always make this kuih coz we have lots of chicken and duck...hehheh...but i don't realize and care about the recipe....huhuh..now...i have to try it by my self. And thanks a lot to kak azie ..coz her recipe really helps me...muaahhhaa..really love  the taste and smell!

Ingredient
6 eggs (original recipe use duck eggs)
1/2  cup palm sugar
1/2 cup castor sugar
1 cup coconut milk
2 pandan leaves
salt
3-4 clove ( i didn't use)

Method
 1.Combine all the ingredient and  beat until combine.
 2.Cover 8 inch round loose bottom tin with plastic.
 3.Pour custard through and  sieve ....
 4.Place steamer over low heat until you see some steam
 5.Steam on medium heat for 30 minutes. Set aside
 6.To eat, slice steamed cake with oiled knife
