Dinner with Asam pedas ikan merah

Salam....guys.


For our dinner I cook ikan merah asam pedas, Ikan bakar with air asam  and kangkung goreng belacan... fantastic!

This marvelous recipe of ikan masak asam I got from my sis..mama @ Kuantan.


Ingredients:
500g ikan merah
60-80ml cooking oil

Spice paste

Finely ground:
15-20 dried chilli “cili kering”, soak and cut into 3cm lengths
2 big onions (about 200g), peeled and sliced
2 cloves garlic, peeled
Turmeric, ginger ,Lengkuas or Galangal
½ tablespoon “belachan” shrimp paste
 ½ tablespoon Jintan

Ingredients B
3 stalks polygonum leaves @ daun kesom
5 pieces tamarind peel “assam keping”

Water
2 tablespoons sugar or to taste
1 teaspoon salt or to taste

Method:

1.Blend, finely grind spice paste
2.heat oil over medium heat, sauté ground spice paste until fragrant, stirring continuously to prevent burning.
3. Once spice paste is fragrant, add in ingredients B.
4. Simmer over low heat for 10 minutes.
5. Add in fish pieces, salt and sugar to taste. Cook for further 8-10 minutes till fish is cooked.
